Slow Cooker Italian Stuffed Peppers

Ingredients
1) 0.5 tablespoon olive oil
2) 0.25 cup onion, chopped
3) 0.5 cup baby bella mushrooms, sliced
4) 0.5 tablespoon garlic, minced
5) 0.5 lb ground turkey
6) 0.5 tbsp
Italian seasoning
7) 0.75 cups chicken broth, dividedd
8) 3 bell peppers
9) 0.5 cup mozzarella cheese, shredded
10) 1 cups marinara sauce
11) 0.25 cup parmesan cheese, optional topping
Steps
1) Heat the olive oil in a large skillet over medium heat.
2) Add the onions & mushrooms, saute 3-4 minutes, then add the garlic and saute for an additional minute.
3) Add the ground turkey and cook through, drain any grease once cooked through.
4) Add the Italian seasoning.
5) Pour 0.5 cup chicken broth into the skillet.
6) Stir everything together, reduce heat and simmer for 10 minutes.
7) Remove from the heat and set aside to cool slightly.
8) Pour the remaining cup of chicken broth in the bottom of a large slow cooker.
9) Remove the stems and seeds from the bell peppers and discard.
10) Divide the turkey and mushroom mixture into each bell pepper.
11) Fill with marinara sauce.
12) Top with a layer of mozzarella cheese.
13) Place each filled pepper in the crock pot.
Cook on low for 6-8 hours or on high for 2-3 hours.
14) Remove from the slow cooker and serve with parmesan cheese on top.
