Ingredients
1) 8 ounces angel hair pasta
2) 6 tablespoons olive oil
3) 0.25 cup red onion
4) 0.25 cup red bell pepper
5) 3 cloves garlic
6) 1 pint cherry tomatoes
7) 1 teaspoon lemon juice, fresh-squeezed
8) 2 teaspoons
Italian seasoning
9) 0.5 teaspoon salt
10) 0.5 teaspoon black pepper
11) 0.25 cup balsamic vinegar
12) 0.25 cup basil
13) 1 cup fresh mozzarella cheese
Steps
1) Bring a large pot of water to boil on the stove.
2) On another burner on the stove, heat 2 tablespoons olive oil in a large skillet over medium-high heat, add the red onion and bell pepper.
3) Sauté for 2-3 minutes, then add the garlic and sauté for an additional minute.
4) Add the cherry tomatoes to the skillet with the Italian seasoning, lemon juice, salt and pepper.
5) Continue cooking, stirring occasionally until the tomatoes begin to burst, 6-8 minutes.
6) While the tomatoes are cooking, add the pasta to the boiling water and cook according to package directions.
7) Drain the pasta and add it to the skillet with the tomatoes.
8) Add the balsamic vinegar and remaining 4 tablespoons olive oil to the skillet.
9) Toss to combine everything.
10) Remove from the heat and stir in the fresh basil and mozzarella cheese.
11) Serve immediately.
