1) In a medium bowl combine apple, 0.25 teaspoon cinnamon, honey, and
lemon juice. Set aside.
2) Preheat oven to 180°C. Line a loaf pan with liners and lightly
drizzle them with olive oil or butter.
3) In a medium bowl, combine flour, baking soda, nutmeg, cinnamon,
allspice and salt with a wire whisk. Set aside.
4) In a large bowl mix oil, eggs, sugar, apple sauce and vanilla; beat
at medium speed with a hand or stand mixer until thick. Scrape down
sides of the bowl.
5) Add the flour mixture, then blend at low speed until combined. Do
not over mix.
6) Fold in apples and walnuts.
7) Pour batter into loaf pan and bake in the center rack about 55
minutes, or until a toothpick inserted in the center comes out clean.
8) Let the pan cool at least 20 minutes, bread should be room
temperature before slicing.
Notes
1) Substitute white whole wheat flour for regular all-purpose flour.
2) Stir in a handful of raisins, dried cranberries, or chopped dates for
extra sweetness.
3) Keep the muffins in an airtight container at room temperature for up
to 1 day, or refrigerate for up to a week.
4) Freeze in a zip-top bag or container for up to 3 months. Let them
thaw in the fridge overnight, or microwave straight from frozen in 20–30
second bursts until warm.
5) Sugar could be reduced to 0.25 cup, but it might be a bit watery.
Cut back on the applesauce as well or add extra flour.
6) Toast the walnuts slightly before baking for a deeper flavor.
7) Substitute the coconut oil for greek yogurt for some protein.
