Ingredients
1) 4.5 cups chicken broth, divided
2) 1 tablespoon cornflour
3) 1 teaspoon soy sauce
4) 0.5 teaspoon minced ginger
5) 2 eggs, lightly beaten
6) 1 spring onion, green parts only, finely sliced.
Steps
1) In a small bowl, mix together half a cup of broth and cornflour.
2) Bring 4 cups of broth or stock to a boil over high heat.
3) Add the soy sauce, ginger, and cornflour slurry to the boiling stock.
4) Next, drizzle the beaten eggs into the soup.
5) Divide between four bowls and garnish with sliced spring onions.
Notes
1) Substitute chicken broth for bone broth or wonton broth.
2) Add noodles to make a full meal.
3) Add mushrooms, green onions, or carrots for increased veggies.
4) Add shredded chicken for extra protein.
5) Add some fresh ginger or tumeric for a flavor kick and its anti-inflammatory properties.
6) Drizzle with some sesame oil for a flavor kick.
