Ingredients
1) 1 large whole garlic head
2) 1.5 tablespoons olive oil
3) 9 cups, about 4 large, thinly sliced sweet onions
4) 2.5 cups, about 2 medium, sliced leeks
5) 1 teaspoon salt
6) 1 teaspoon dried thyme
7) 2 tablespoons all-purpose flour
8) 1/3 cup dry white wine
9) 4 cups vegetable broth
10) 2 cups milk
Steps
1) Roast garlic and caramelize onions using preferred methods.
2) Over medium heat, sautée leeks alongside salt and thyme until golden, about 12-15min.
Stir in the caramelized onions and cook for a few extra minutes.
3) Stir the flour into the onion mixture and cook 1min. Add wine, broth, and garlic, and bring to a boil. Reduce heat, and simmer 30 minutes.
4) Place cooked onion mixture in a blender and process until smooth.
5) Pour the blended onion mixture back into the large saucepan, and add milk. Simmer 8min or until thoroughly heated.
Notes
1) For greater flavor, add extra herbs like dried oregano, or basil, and add freshly grated parmesan.
2) Substitute flour for corn starch for a sikier feel.
3) Substitute part of the milk for evaporated milk to enhance the flavor or consider reducing or eliminating the milk altogether.
