8) 2 teaspoons chopped fresh thyme, plus more for garnish
9) 0.25 cup freshly grated Parmesan cheese

Steps
1) Spray a sheet pan with olive oil. Preheat oven to 425ºF | 218ºC.
2) Wash and dry sweet potatoes then cut each into 0.75-inch thick round
slices.
3) In a large bowl, combine melted butter with salt, pepper, garlic
powder and thyme. Add sweet potatoes and toss to evenly coat.
4) Spread sweet potatoes in an even layer on the prepared sheet pan.
Bake for 25 minutes, or until fork tender. Remove and allow to cool for
5 minutes.
5) Adjust oven rack to the second from the top and switch oven to high
broil.
6) Using a fork, gently smash each slice.
7) Spray lightly with olive oil then top each with a sprinkle of
Parmesan cheese and return to upper middle rack of the oven.
8) Broil for 3-5 minutes, until cheese is melted, and edges are crispy.
9) Garnish with thyme and a small dollop of yogurt, if using.
