Ingredients
1) 2 cups grated cucumber (from about 1 medium 10 oz. cucumber, no need to peel or seed first)
2) 1.5 cups of plain Greek yogurt
3) 2 tablespoons chopped fresh mint and/or dill
4) 1 tablespoon lemon juice
5) 1 medium garlic clove, minced
6) 0.5 teaspoon salt
Steps
1) Remove excess moisture from cucumber by lightly squeezing it. Transfer to a serving bowl.
2) Add yogurt, olive oil, herbs, lemon juice, garlic and salt to the bowl and stir to blend.
3) Let mixture rest for 5 min to allow flavors to meld.
4) Taste and adjust as necessary.
Notes
1) Tzatziki can be kept in the fridge for 4 days.
