Ricotta-Spinach Rice
Servings: 2 | Amount per Serving: 1/2
Ingredients
1) 1 cup of brown rice
2) 2 cups stock
3) 1 onion
4) 2 garlic cloves
5) Salt and pepper to taste
6) 200g spinach approx.
7) 250g ricotta cheese
8) Drizzle of white wine
9) Raisins
10) Olive oil
Steps
1) Sauté onions and garlic.
2) Add rice and broth and wait until broth begins to boil.
3) Allow mixture to boil for 8 minutes.
4)Add splash of white wine.
5) Add spinach and allow to boil for 5 more minutes until broth is fully absorbed.
6) Add ricotta cheese, salt, pepper and raisins and stir.
7) Allow a few minutes to cool.
